What temperature should chicken be at to cook?

We've got to speed things up in this hotel. Chef, if a guest orders a three-minute egg, give it to him in two minutes.
If he orders a two-minute egg, give it to him in one minute.

180F, pretty important especially if you're cooking huge pieces of meat or the whole chicken itself for safety purposes

The core temp of the chicken should be 80 deg. C. or higher
